You’re probably wondering… what the heck is FREEKEH? Well, I’m here to tell you!
Freekeh is an “ancient grain” – roasted green wheat, to be exact. It’s similar to rice or quinoa, but with fewer calories and fat AND more protein and fiber (and it’s lower glycemic). You can cook it / use it like any other grain for the most part – check out some of the recipes from Freekeh Foods to get the ideas flowing! I made a healthy dinner with the Rosemary freekeh from Freekeh Foods, but I’m thinking I’ll try the original flavor in a breakfast dish next. Anyways, here’s my recipe for Garlic Breaded Pork Chops, Sauteed Veggies, and Rosemary Freekeh!
For our ingredients (we like simple dinners during weeknights), we used store-bought pre-breaded pork chops, frozen vegetables (broccoli and cauliflower), freekeh (the Rosemary Sage flavor by Freekeh Foods), and garlic aioli. We baked the pork chop in the oven, then topped it off with some garlic aioli, and we also cooked the veggies with a little bit of the aioli. The freekeh was very easy to make, and once everything was ready, dinner was served! This meal was super easy to make and it was delicious!
