After the holidays, I desperately needed to get back on track with my eating! I haven’t been very good at planning my meals out lately – I’ve struggled with eating the same thing every day (getting bored), coming up with new ideas, and just getting my ish together honestly.
I had a fantastic cooking day yesterday though, and knocked out all kinds of recipes! They weren’t perfect, but it was a huge improvement from the last few weeks. Here’s some of what I will be noshing on this week:
3-Ingredient Skinny Banana Chocolate Chip Cookies
I have had a hard time coming up with good breakfasts for myself. My appetite has been all out of wack, so nothing sounds good to me (especially not eggs). Carbs are my downfall, but this recipe isn’t too bad. It at least uses whole grain oats & dark chocolate 🙂 Not a perfectly healthy meal, but it’s a baby step improvement and I’ll take that. I used this recipe from The Idea Room but made a little bit extra 🙂
All these require are some rolled oats, mashed bananas, and chocolate chips! You can use pretty much anything else in place of the chocolate chips – nuts, berries, coconut, the list goes on. Or you could even add some protein powder for an extra punch. You could also probably make these in muffin form. Either way, they’re easy to make and delicious! (And they help with my incessant chocolate cravings).
Banana Chocolate Chip Almond Butter Bites
These tasty little morsels get frozen in the freezer for a refreshing, delicious snack. Another simple recipe, this one comes from A Healthy Slice of Life (with some modifications).
Crispy Roasted Parmesan Chickpeas
I love a healthy, crunchy & salty snack. Air-popped popcorn is a favorite of mine, but roasted chickpeas have become a close second. Usually I buy them, but I wanted to try making them myself (taking inspiration from this recipe). I wasn’t sure how they’d turn out, but surprisingly I didn’t fail miserably! I did have to roast them twice (the first time they got a little soggy after sitting), but as long as I ate them while they were fresh out of the oven, they tasted great. I’ll definitely make these again, but will let the chickpeas dry out MUCH more. I got impatient 🙂

Homemade Fruit Gummy Snacks
Sometimes I’m still a little kid, and that means I like gummy snacks! But they’re usually filled with sugar and crap. And they’re not very cheap. So I decided to try making my own! I have a containter of Great Lakes gelatin that I keep on hand (for making bone broth, mostly) so all I needed was some fruit juice! I followed this recipe from Modern Parents Messy Kids and used a low sugar juice from Tropicana. For my first try, I don’t think they turned out too bad. The texture is somewhere in between jello and a fruit gummy, so I’m thinking I need to use more gelatin next time. Also, because the fruit juice I used was low sugar… it’s lacking in flavor. I did add a bit of honey, but I think next time I’ll try a different juice, or better yet make my own!
These ones aren’t cute, but I also made some using molds I had on hand. There are 2 other recipes on deck this week that I haven’t made yet (so I have no pictures to show you). I’m making Pesto Chicken Pasta and Skinny Pizza Wraps for lunches this week!
