Finding a reason to celebrate the everyday is always nice, which is why this past “Hump Day” was a fantastic night out catching up with friends. We stopped by Deagan’s Kitchen for their vegan night (even though none of us ended up actually getting anything off the vegan menu – unless you count the beer I got):
For dinner, I tried the maple black pepper glazed salmon with sautéed swiss chard & roasted butternut squash.
Best. Meal. Ever.
As if I wasn’t in food heaven enough, my friend & I decided to split the double chocolate stout cheesecake.
So rich & delicious!
I went to bed happy & full, and woke up to this view on my morning commute on Thursday:
I spent Thursday night making a delicious vegetarian dinner consisting of roasted red potatoes (super excited that our oven works now – yay!), sautéed baby kale mix (with baby kale, spinach, and swiss chard), and some green beans.

I’m looking forward to a relaxing evening in tonight, and a busy rest of the weekend! I’m excited to be meeting up with some bloggers on Saturday that I haven’t met yet, and Sunday I’ll be heading out to that Health & Beauty expo!
